one thing that's really interesting to write in a character is a trait, hobby, etc that completely contradicts their personality. this allows you to add depth to your character as well as separate them from the rest of the pack! it also makes them more realistic and can create a divide between a realistic character and a straight-up cliche/stereotype.

some examples in my work:
—ares from Fireheart is volatile, unfriendly, and cynical, but he loves nature and feels most at peace when he's alone and surrounded by trees or flowers.
—dylan from Different is loud, confident, and independent, but has a paralyzing fear of being alone.
—clark from Aegis is outspoken, blunt, hot-headed, and wildly passionate, but he works with animals and is very soft & gentle with them.
—matthias from Caged is charismatic and kind, but has severe social anxiety.

a few examples for you to consider or use in your works:

—one who has great leadership qualities, except their biggest fear is public speaking
—one who is insanely smart, but hides it under a level of smartass
—one who is really tough on the outside and everyone fears them, only they're really great with kids and younger people tend to flock to them, making them a reluctant mother hen
—one who is really soft and quiet but has an uncanny skill for marksmanship
—one who has an "idgaf, i'm cool" exterior, but has an extensive amount of knowledge on literature and is secretly a huge book nerd
—one who is very adventurous and fun-loving but also really careful
—one who is quiet but loves to party
