Potato, Bacon, and Hot Dog Soup
Prep time: 10 minutes Cook time: 25 minutes Servings: 4
Ingredients:
3 cups potatoes, diced
¾ cup carrots, diced
1-2 tsp chicken bouillon, to taste
1 cup milk or half cream
1 cup peas, frozen, thawed
1 cup corn, frozen, thawed
¼ cup celery, diced (optional)
¼ tsp onion powder
½ tsp garlic powder
½ tsp pepper
½ cup shredded mozzarella cheese
3-5 bacon strips, cooked, diced
3-6 hot dogs, sliced (optional)Directions:
1. Add the potatoes, carrots, and chicken bouillon to a pot with just enough water to cover them. Boil them until semi-soft. (If you don't use chicken bouillon, add ¼ tsp salt instead.)
2. Cut bacon into pieces (scissors work great) and cook it. Discard grease, set aside.
3. Lightly mash the potatoes to break them up a bit.
4. Add everything, except the bacon and hot dogs to the pot.
5. Heat soup on low-medium. If more liquid is needed, add more milk and cheese.
6. Add bacon.
7. If adding sliced hot dogs, you can microwave them until they start to stick together (optional). (This will lock the flavor in.)
8. Mix and serve.
Tip: Often tastes better the next day after flavors blend.
