Percy and Annabeth have grayish-white streaks in their hair because of holding up the world and Tartarus.

Nico has grayish-white streaks in his hair because of Tartarus and genetics.

Thalia has white bangs because she brought back to life by the fleece after dying and turning into a pine tree.

Hazel has white bangs because she came back to life from the underworld.

Leo has white bangs because he was resurrected from the dead.

Jason has white bangs because he was resurrected from the dead by Nico.

They all can never dye the gray and white pieces of their hair because it just adds it back to their hair like how it was before.

Jason is alive and was resurrected by Nico in my AUs. Nico dragged Jason's spirit back into his body bringing him back to life. Nico made a deal with Thanatos and Hades so he could bring Jason back to life.
